## About this wine

Domaine Nicolas Maillet is a family-owned estate located in the village of Verzé in the Mâconnais region of southern Burgundy. After returning to the family cellars in 1999, Nicolas Maillet withdrew from the local cooperative to bottle his own estate wines. The estate covers 6 hectares of Chardonnay grown on high-density hillside parcels rich in limestone and chalk. Farming has been certified organic since 2008 and biodynamic since 2013.

## Interesting facts

- Fermentation with wild yeasts lasts up to 9 months in stainless steel tanks.
- The estate's vines average 45 to 50 years of age and are farmed biodynamically.
- Nicolas Maillet avoids oak aging entirely to preserve chalky mineral purity.

## Food pairing

The lively acidity and chalky minerality of this un-oaked Chardonnay slice through rich cream sauces and butter while accentuating fresh seafood, delicate fish, and regional goat cheeses.

## Wine making process

Hand-harvested grapes in small crates undergo a remarkably slow, cool wild-yeast fermentation in temperature-controlled stainless steel tanks lasting 8 to 9 months. Malolactic fermentation is fully completed, followed by extended aging on fine lees in tank. Nicolas Maillet avoids oak completely to showcase the natural tension, chalky minerality, and purity of the terroir.
