## About this wine

Domaine Mosse was established by Agnès and René Mosse in Saint-Lambert-du-Lattay in the Loire Valley after they ran a popular wine bar in Tours. Today, the estate is managed by their sons Joseph and Sylvestre Mosse. Magic of Juju is a natural négoce cuvée named after the 1968 avant-garde jazz album by Archie Shepp. Reflecting René Mosse's passion for music, jazz is played 24/7 in the barrel cellar so the wine can ferment and age while listening to music.

## Interesting facts

- The wine is named after Archie Shepp's iconic 1968 jazz album The Magic of Ju-Ju.
- Jazz music is played continuously in the cellar 24 hours a day during fermentation.
- The 2025 harvest began on August 21, setting the earliest harvest record in estate history.

## Food pairing

This vibrant, high-acidity natural white wine thrives alongside fresh, saline, and citrus-forward dishes. Its crisp mineral snap cuts through creamy goat cheeses like Sainte-Maure de Touraine while enhancing the freshness of raw seafood and oysters without overwhelming their delicate flavors.

## Wine making process

Organically grown grapes are harvested by hand and subjected to slow pneumatic pressing. Fermentation occurs spontaneously using native yeasts, with each grape variety vinified separately. The wine undergoes natural malolactic fermentation. Elevage takes place over several months split between neutral oak barrels and stainless steel tanks on fine lees. The wine is bottled unfined and unfiltered with minimal sulfur additions.
