## About this wine

Maison Idiart was founded in 2013 by Nicolas Idiart, a passionate winemaker who graduated from Bordeaux's prestigious École d'Œnologie de Blanquefort at just 19 years old. After working at renowned estates like Château Talbot and Château Palmer, as well as in New Zealand, Australia, and Canada, Idiart returned to the Loire Valley to focus on fresh, terroir-driven wines. Sourced from sustainable vineyards in the village of Marigny-Brizay, south of Chinon, this Pinot Noir reflects the region's cool climate and limestone-clay soils, offering a vibrant and elegant expression of the grape.

## Interesting facts

- Winemaker Nicolas Idiart graduated from Bordeaux's prestigious École d'Œnologie de Blanquefort at just 19 years old.

- Vines are grown in Marigny-Brizay, south of Chinon, on limestone and clay soils that impart distinct mineral tension.

## Food pairing

This cool-climate Pinot Noir's high acidity and low tannins make it exceptionally versatile. It cuts through the richness of fatty fish like salmon and tuna, while its delicate red fruit profile complements poultry and lean meats without overpowering them.

## Wine making process

The grapes are hand-picked at optimal maturity and undergo a five-day cold soak at 10°C in temperature-controlled stainless steel vats to extract primary fruit aromas. Fermentation takes place on the skins for 12 days at 25°C, with daily punching down of the cap (pigeage) to gently extract color and soft tannins. Malolactic fermentation is fully completed in stainless steel. To preserve the pure, fresh red fruit characteristics and mineral tension of the terroir, the wine is entirely unoaked and aged exclusively in stainless steel vats.
