## About this wine

Domaine des Maisons Brûlées, located in Pouillé in France's Loire Valley, was an early pioneer in biodynamic viticulture. Taken over in 2013 by Corinne and Paul Gillet, former restaurateurs trained under legendary natural winemaker Bruno Schueller, the estate maintains strict biodynamic principles using draft horses and cultivating rich biodiversity. The cuvée name 'Poussière de Lune' ('Moon Dust') references both the biodynamic lunar calendar and the dusty silex soils of the 'le Herdeleau' vineyard site, where 70- to 80-year-old vines yield complex, authentic expressions of Loire terroir.

## Interesting facts

- The name Poussière de Lune ('Moon Dust') refers to the biodynamic lunar rhythm and dusty silex soils.
- Plowing in the vineyards is performed by Praline, the winery's draft horse, to protect topsoil life.
- The wine comes from 70- to 80-year-old vines in the famous 'le Herdeleau' vineyard site.

## Food pairing

The combination of old-vine texture, vibrant natural acidity, and subtle phenolic structure from partial skin contact allows this wine to stand up to rich roasted meats, buttery fish, and earthy mushroom dishes.

## Wine making process

The 2023 Poussière de Lune is a blend of 60% Sauvignon Blanc and 40% Menu Pineau, harvested together from old vines in clay-limestone and silex soils. Vinification includes a 5-day skin maceration for 20% of the grapes, while 80% undergo direct pressing in a traditional Coquard press. Fermentation occurs spontaneously using indigenous yeasts without added sulfur, temperature control, or additives. The wine ages for 12 to 18 months in large neutral Alsatian oak foudres and old oak barrels, followed by 10 to 15 months in fiberglass vats before hand-bottling without fining or filtration.
