## About this wine

Domaine de l'Astré was created in 2017 by Aude Duval and Sylvain Ohayon in Saint-Méard-de-Gurçon, situated on a limestone cliff in the Dordogne Valley of South West France. Managing a single-block vineyard enclosed by woods, the duo crafts low-intervention living wines using organic and biodynamic practices. Man E Man is an unconventional cuvée reflecting the unique terroir of their 40-year-old vines.

## Interesting facts

- Blends short-macerated white Sémillon grapes with direct-pressed red Cabernet Sauvignon and Cabernet Franc.
- Founders Aude Duval and Sylvain Ohayon first met at the foot of the Andes in Argentina before opening their Dordogne estate.
- Total production for the 2024 vintage was strictly limited to 2,500 bottles.

## Food pairing

The vibrant acidity and subtle skin-contact tannic structure complement roasted vegetables, earthy mushrooms, and savory pork dishes, while balancing soft cheeses without overwhelming delicate flavors.

## Wine making process

Harvested manually in mid-September, organic Sémillon undergoes a short skin maceration while Cabernet Sauvignon and Cabernet Franc are directly pressed. The component juices are blended and aged in neutral oak barrels for seven months. Fermentation occurs spontaneously with indigenous yeasts, without fining, filtration, or added sulfites, yielding a total production of 2,500 bottles.
