## Food pairing

The wine's crisp acidity and medium body complement seafood and lighter dishes by cutting through richness and cleansing the palate. Its fruity and citrus notes harmonize with the flavors of fish, vegetables, and fruits.

## Wine making process

The production of Marcel Martin Haut-Poitou involves direct pressing of the Sauvignon Blanc grapes. The clarified juice is then settled at low temperatures before undergoing fermentation for 12 to 14 days. Fermentation is carefully controlled, with temperatures kept at a maximum of 18°C to preserve aromas. Following fermentation, the wine is racked and aged on its fine lees until bottling.
