## About this wine

Established in 2015 with just two hectares of vines in Mancey, Domaine Marion Navoiseau has grown into a highly artisanal, independent estate in the southern Mâconnais region of Burgundy. After expanding the estate to 4.8 hectares in 2023, Marion transitioned from selling her grapes to a local cooperative to vinifying and bottling her own premium estate-grown wines. The vineyards are planted on two distinct elevated plateaus that benefit from exceptional all-day sun exposure. Deeply committed to environmental stewardship, the estate has been certified organic since 2022 and incorporates biodynamic practices to preserve the natural vitality of the clay-limestone soils.

## Food pairing

This dry Chardonnay strikes a beautiful balance between vibrant, high-toned acidity and a subtle, creamy texture from partial oak aging. It pairs exceptionally well with rich seafood and poultry dishes where the crisp acidity cuts through butter or cream sauces, while its medium body and elegant fruit profile complement soft cheeses and charcuterie without overwhelming them.

## Wine making process

The winemaking process is designed to balance fresh mineral tension with elegant texture. Grapes are 100% hand-harvested and undergo gentle pneumatic pressing immediately upon arrival at the cellar. Alcoholic fermentation is carried out in temperature-controlled stainless steel tanks to preserve the vibrant primary fruit. The wine is then aged for nine months using a split maturation regimen: 70% of the blend is aged in large-format 400-liter French oak barrels (25% new) to introduce subtle complexity, while the remaining 30% is matured in stainless steel to maintain crisp acidity. The components are blended in the spring prior to bottling.
