## About this wine

Domaine Trapet, based in Gevrey-Chambertin, is one of Burgundy's most respected estates, currently run by Jean-Louis Trapet and his family. The family has been a pioneer in biodynamic farming for nearly three decades. This Marsannay Rouge, first created in 1979, represents a historical effort to restore the reputation of Marsannay, which historically rivaled Gevrey-Chambertin. The wine is a unique blend of two distinct climats: 'Les Grasses Têtes,' which provides limestone-driven structure and muscle, and 'Le Grand Poirier,' which contributes old-vine elegance and complexity.

## Interesting facts

- Domaine Trapet has been fully certified biodynamic since 1998, making them pioneers in the Côte de Nuits.
- The wine blends two distinct climats, combining limestone-driven power with 50-year-old vine elegance.
- In 2023, the estate avoided top-trimming (rognage) to naturally limit alcohol levels and preserve freshness.

## Food pairing

The wine's vibrant acidity and structured tannins cut through the richness of feathered game and roasted meats, while its earthy undertones beautifully complement wild mushrooms and rustic Burgundian cheeses.

## Wine making process

The 2023 vintage was hand-harvested and vinified using biodynamic principles. The grapes underwent fermentation with indigenous yeasts in open vats, incorporating 20% whole clusters to enhance aromatic complexity and structure. Extraction was kept extremely gentle to preserve fruit purity. The wine was aged entirely in 500-liter French oak demi-muids with a very low percentage of new oak, allowing the terroir's mineral character to remain prominent before being bottled with minimal fining.
