## About this wine

Marthe Henry, former journalist and granddaughter of Meursault vigneron Pierre Boillot, established her micro-négociant winemaking house in Meursault in 2017. Sourced from the Premier Cru Les Fournières climate located on the south-eastern slopes of the Corton hill in Aloxe-Corton, this cuvée comes from gravelly clay-limestone soils. Production is kept at a micro-scale, reflecting a commitment to artisanal, terroir-focused Burgundy winemaking.

## Interesting facts

- Marthe Henry left a journalism career in Paris in 2013 to study winemaking in Beaune and establish her estate.
- No new oak is ever used; élevage takes place in 228-liter used barrels previously dedicated to white wines.
- Micro-scale production yields only 300 to 600 bottles (1 to 2 barrels) of this Premier Cru per vintage.

## Food pairing

The lively acidity, refined tannin profile, and savory berry fruit of this Premier Cru Pinot Noir harmonize perfectly with game birds, roasted waterfowl, and earthy mushroom preparations. Protein-rich meats soften the wine's young structural grip, while rich washed-rind cheeses echo its complex terroir character.

## Wine making process

Crafted using whole-cluster fruit with spontaneous fermentation driven by indigenous yeasts and zero added sulfur during vinification. Gentle extraction occurs via a two-week infusion with minimal daily pump-overs. Maturation takes place over 18 months on fine lees in seasoned 228-liter oak barrels without new wood or racking. The wine receives only a light dose of sulfur at bottling before bottle-aging prior to release.
