## About this wine

Marthe Henry Boillot established her boutique winemaking business in 2017 in Meursault, housed within her grandparents' historical cellar. The granddaughter of renowned vigneron Pierre Boillot, she initially pursued journalism in Paris before completing formal viticultural training in Beaune. Sourced from elevated vineyard sites in the Hautes-Côtes de Beaune, this micro-négociant bottling highlights high-altitude Burgundian terroir. Starting with the 2023 vintage, the domaine integrated estate-grown plots into its production alongside carefully sourced fruit from trusted local growers.

## Interesting facts

- Founder Marthe Henry worked as a journalist in Paris before returning to Burgundy in 2013 to study winemaking.
- She operates her micro-négociant project out of her grandfather Pierre Boillot's historic Meursault cellar.
- The wine undergoes fermentation and 18 months of aging with zero added sulfur until bottling.

## Food pairing

The high natural acidity and mineral drive cut through rich textures like butter and cream, while matching the delicate intensity of fresh seafood and goat cheese.

## Wine making process

Grapes are sustainably and organically farmed before being hand-harvested in small crates. Vinification begins with direct pneumatic pressing followed by spontaneous alcoholic fermentation driven by indigenous yeasts. The wine undergoes fermentation and an extended 18-month élevage on fine lees in neutral oak barrels completely without added sulfur dioxide. Unfined and subject to only light filtration prior to bottling, a minimal dose of sulfur is added at bottling to preserve natural energy and purity.
