## About this wine

Marthe Henry Boillot, granddaughter of famed Meursault vigneron Pierre Boillot, left a career in journalism to pursue winemaking in 2013. Based in Meursault, her boutique micro-négociant venture focuses on low-intervention wines crafted from thoughtfully selected plots across Burgundy. The Bourgogne Rouge 'Saint-Martin' comes from gray marl and limestone soils around Saint-Martin in the Côte de Beaune.

## Interesting facts

- Marthe Henry Boillot worked as a Paris journalist before returning to Burgundy in 2013 to pursue winemaking.
- Fermented with 100% whole clusters and zero added sulfur throughout fermentation and 18 months of oak aging.
- Grown on historic gray marl and limestone soils around the Saint-Martin terroir in the Côte de Beaune.

## Food pairing

The lively acidity and silky, gentle tannins of this delicate Pinot Noir complement tender poultry, pork, and earthy mushroom dishes without overpowering light proteins or delicate flavours.

## Wine making process

Harvested by hand using 100% whole clusters, fermentation begins naturally with native yeasts in tanks. The grapes undergo gentle twice-daily pump-overs after an untouched 24-hour maceration. The wine aged for 18 months in neutral 228-liter French oak barrels without racking or sulfur added during vinification, bottled with minimal sulfur.
