## About this wine

Marthe Henry Boillot is a vigneronne based in Meursault, Burgundy, and the granddaughter of respected winemaker Pierre Boillot. After working as a journalist in Paris, she returned to Burgundy in 2013, studied viticulture in Beaune, and trained under Pierre-Henri Rougeot. She founded her micro-négociant label in 2017 in her family's historic cellar. Les Maizières is a vineyard plot situated in the Rully AOC of the Côte Chalonnaise, situated on clay-limestone soils. Starting in 2023, Marthe also regained access to historic family estate vineyards.

## Interesting facts

- Marthe Henry Boillot worked as a Paris journalist before returning to Burgundy in 2013 to pursue winemaking.
- The wine undergoes an extended 18-month aging process in neutral oak casks without any lees stirring.
- The Les Maizières parcel sits on rich clay-limestone marl soils in the southern Côte Chalonnaise.

## Food pairing

The vibrant acidity and textured profile of this Burgundian Chardonnay pair seamlessly with delicate seafood and poultry dishes. The wine's structural freshness cuts through cream and butter sauces while standing up to earthy vegetable risottos and aged goat cheese.

## Wine making process

Grapes from Les Maizières are hand-harvested and subjected to direct pneumatic pressing as whole clusters. After a short 24-to-48-hour settling period, spontaneous alcoholic fermentation occurs using native yeasts in oak barrels. Fermentation and aging take place with zero added sulfur. The wine matures for 18 months in neutral French oak barrels without lees stirring (bâtonnage) or racking. It is bottled unfined after light filtration, with only a minimal addition of sulfur at bottling.
