## About this wine

The Manincor Mason 2020 is a 100% Pinot Noir from the Mazzon sub-region of Alto Adige, Italy, referred to as 'Mason' by the producer. This wine originates from the highest parcels of the Mazzon vineyard, considered a prime site. Weingut Manincor, a historic estate with a 400-year legacy, practices strict biodynamic viticulture, holding a 'Respect' certification for sustainable farming. The estate is managed by Count Michael Goëss-Enzenberg, who has focused on biodynamic cultivation since 2005, emphasizing soil health and natural vineyard treatments. The winery itself is a modern, underground structure designed to harmonize with its surroundings.

## Interesting facts

- The estate is over 400 years old.
- The winery is built underground to blend with the landscape.
- The 'Mason' name distinguishes a specific, high-quality plot.
- Biodynamic farming is central to Manincor's philosophy.

## Food pairing

The wine's medium-plus body and fine tannins are well-suited to complement the richness of red meats and game. Its vibrant acidity cuts through fattiness, while its fruit and subtle spice notes can echo or contrast with herbs and earthy ingredients in dishes.

## Wine making process

The Manincor Mason 2020 grapes were hand-harvested from a specific vineyard plot. Each parcel was fermented separately in open-top wooden vats using natural yeasts, with a two-week maceration period involving daily manual punching down of the cap. Following fermentation, the wine underwent 16 months of aging in French barriques, with 20-25% being new oak, and was aged on its fine lees. The estate adheres to biodynamic cultivation practices and holds a 'Respect' certification for sustainable viticulture.
