## About this wine

Massimo Coletti is a fourth-generation winemaker based in the hills north of Venice, Treviso. After studying oenology and gaining hands-on experience at iconic estates in Bordeaux and Burgundy, he returned to his family's property in 2002 to transition toward minimal-intervention viticulture. The Via Larghe BF bottling pays tribute to two specific family vineyard parcels, reviving the region's historic Col Fondo tradition of ancestral bottle-fermented sparkling wines made without disgorgement.

## Interesting facts

- BF stands for Borgo Faliero, referencing the vineyard blended alongside the historic Via Larghe plot.
- The wine is bottled Col Fondo (with its natural yeast sediment intact), resulting in a cloudy presentation and enhanced aging potential.
- Winemaker Massimo Coletti spent years training at world-renowned estates including Château Latour in Bordeaux and Domaine d'Eugénie in Burgundy.

## Food pairing

The high, electric acidity and refreshing effervescence cut cleanly through salty charcuterie and delicate fried seafood. The wine's crisp orchard fruit profile complements ocean-fresh flavors without masking their subtle characteristics, while the soft texture from lees contact holds up effortlessly against mild cheeses.

## Wine making process

Hand-harvested grapes are gently pressed using a pneumatic press before undergoing spontaneous primary fermentation driven by indigenous yeasts in stainless steel tanks. The wine ages on fine lees for 12 months with periodic bâtonnage. Secondary fermentation occurs naturally inside the bottle without added dosage or disgorgement, preserving the spent yeast sediment at the bottom of the bottle to create texture and complex nuances over time.
