## About this wine

Domaine Lindenlaub has been cultivating vines in the Alsatian village of Dorlisheim since 1759. Christophe Lindenlaub joined his father Jacques in 1999, fully converting their 10 hectares to organic farming in 2009 and moving to zero-added-sulfur natural winemaking in 2014. The label features the Ensō, a Japanese calligraphy circle representing balance, energy, and nature.

## Interesting facts

- The label features an Ensō circle, a Japanese zen calligraphy symbol representing flow and balance.
- The Lindenlaub family has been farming vineyards in Alsace continuously since 1759.
- Reimagines Sylvaner—traditionally a high-yield utility grape—into an expressive skin-contact natural wine.

## Food pairing

The gentle tannins and high acidity of this skin-contact Sylvaner cut through richer poultry and pork fat while complementing mildly spiced vegetable dishes and washed-rind cheeses.

## Wine making process

Hand-harvested from 20-year-old Sylvaner vines planted on clay, limestone, and pink sandstone soils. The grapes undergo short skin-contact maceration in stainless steel tanks and ferment spontaneously with wild yeasts. Aged on fine lees for 8 months in stainless steel before being bottled unfined, unfiltered, and without added sulfites.
