## About this wine

Max Dexheimer represents the fifth generation of winemakers in Saulheim, Rheinhessen, operating from a historic family estate founded in 1896. Working alongside his partner Marika Tikas, Max converted the vineyards to certified organic and biodynamic farming, producing expressive, low-intervention wines. The name 'Luftmensch' translates to 'dreamer' or someone with their head in the clouds, embodying the carefree and airy character of this cuvée. The label design is cut from an original large-scale painting created by an artist friend of the producer.

## Interesting facts

- 'Luftmensch' translates from German to 'dreamer' or a person with their head in the clouds.
- Aged for 9 months on full lees in traditional 1,200-liter German oak barrels called Stückfass.
- The label artwork is cut from a single large painting created by an artist friend of the winemaker.

## Food pairing

The bright, high acidity and lighter body of this dry white wine harmonize naturally with fresh, crisp ingredients and green vegetables. Citrus-driven dressings, soft goat cheese, and light seafood complement its mineral edge and clean profile without overwhelming its delicate fruit character.

## Wine making process

Grapes are organically grown and hand-harvested from limestone-rich soils in Saulheim and Armsheim. Whole clusters undergo direct pressing and spontaneous fermentation with wild yeast in neutral oak vessels without temperature control. The wine matures on its full lees for 9 months in traditional 1,200-liter German oval oak barrels (Stückfass) before being bottled unfined and unfiltered with minimal added sulfur.
