## About this wine

Laurent Ponsot, formerly of the legendary Domaine Ponsot, established his own high-tech négociant project in 2017 alongside his son Clément. Based in Gilly-lès-Cîteaux, the estate blends traditional Burgundian terroir expression with cutting-edge technology, such as temperature-controlled shipping cases and synthetic corks to prevent cork taint. The 'Cuvée du Pandoréa' is a village-level Meursault named after the Pandorea flower, reflecting Ponsot's signature naming convention of using plant and flower names for his cuvées.

## Interesting facts

- Laurent Ponsot names all of his white wines after flowers or plants; Pandoréa is a genus of climbing vines.
- The estate uses high-tech ArdeaSeal synthetic closures instead of traditional cork to completely eliminate the risk of cork taint.
- Ponsot famously rejects the use of new oak barrels, aging his Meursault in older wood to preserve pure fruit and terroir.

## Food pairing

Meursault's rich, textured body and vibrant acidity make it a perfect match for decadent, creamy dishes and high-quality proteins. The wine's natural weight complements buttery sauces, roasted poultry, and rich seafood like lobster or scallops, while its crisp acidity cuts through the richness of cream and cheese.

## Wine making process

The winemaking philosophy of Laurent Ponsot is highly distinctive. He eschews new oak barrels, preferring older oak (typically 5 years or older) to preserve the pure fruit expression of Chardonnay without heavy wood influence. Fermentation and aging take place in temperature-controlled environments. Ponsot is famous for using state-of-the-art synthetic corks (ArdeaSeal) and intelligent cases equipped with temperature sensors to ensure perfect provenance.
