## Food pairing

High natural acidity and lively effervescence slice through rich fats in soft cheeses, butter sauces, and fried dishes, while complementing delicate seafood and poultry flavors.

## Wine making process

Harvested entirely by hand, whole grapes are gently pressed in a pneumatic press to extract pure free-run juice without bitter compounds. Primary fermentation takes place in temperature-controlled stainless steel tanks. Produced using the traditional method, the wine undergoes secondary bottle fermentation followed by a minimum of 12 months aging on the lees before disgorgement with a light Brut dosage of 5-6 g/L.
