## About this wine

Bodegas Frontonio was founded in 2008 by Master of Wine Fernando Mora and oenologist Mario López in Valdejalón, Aragón. Named after Saint Frontonio, who legend says was decapitated by the Romans yet had his head miraculously float upstream against the river current, the project epitomizes going against mainstream trends. The estate focuses on rescuing forgotten, high-altitude old bush vines planted in rugged clay-limestone soils, crafting terroir-driven wines with modern precision and deep historical respect.

## Interesting facts

- Named after Saint Frontonio, whose head floated upstream, symbolizing the winemakers going against the current.
- Fermented and aged in historic underground concrete caves with zero oak contact.
- Sourced from dry-farmed old bush vines aged between 50 and 65+ years old.

## Food pairing

The high, vibrant acidity and distinctive mineral salinity cut through rich seafood textures and light fats, while fresh citrus and botanical elements harmonize with herbs and delicate white fish without overwhelming the palate.

## Wine making process

Grapes are organically farmed and hand-harvested from 50 to 65+ year-old dry-farmed bush vines located at elevations over 500 meters. Vinification involves gentle pressing and a short skin maceration without added sulfur dioxide. Fermentation occurs using native yeasts in underground cement vats at 17–18°C. The wine matures for six months on fine lees in underground concrete tanks without oak influence or battonage to preserve pure limestone salinity.
