## About this wine

La Guardiense is one of Italy's largest and most respected cooperative wineries, founded in 1960 by 33 far-sighted farmers in the Sannio area of Campania. Today, it has grown to over 1,000 members who cultivate about 1,500 hectares of vineyards. The 'Mirata' line represents a selection of Falanghina del Sannio, showcasing the unique volcanic and clay-limestone soils of the Benevento province. This wine highlights the cooperative's commitment to preserving local grape varieties and modernizing regional winemaking.

## Interesting facts

- La Guardiense is one of Italy's largest cooperatives, founded in 1960 by just 33 visionary winemakers.
- The Sannio hills feature unique volcanic soils mixed with clay and limestone, giving Falanghina its signature mineral edge.
- Falanghina was nearly forgotten in the 20th century but has undergone a massive quality renaissance in Campania.

## Food pairing

Falanghina's vibrant acidity and clean mineral profile make it an exceptional match for seafood and light Mediterranean dishes. The wine cuts through the richness of fried foods and complements the salinity of shellfish, while its medium body stands up well to light poultry and fresh cheeses.

## Wine making process

The grapes are harvested manually in late September. After gentle pressing, the must undergoes temperature-controlled fermentation in stainless steel tanks at 15-16°C to preserve the fresh primary fruit aromas. The wine is aged on its fine lees in stainless steel for several months before bottling, enhancing its texture and complexity without any oak influence.
