## About this wine

Dorsal Wines is the project of Devin Alexander Myers and photographer/artist Jenna St. George, operating out of a small redwood barn cellar on the Mendocino coast. Sourced from dry-farmed organic and biodynamic vineyards in Mendocino County, Monsoon is a pure expression of coastal California terroir.

## Interesting facts

- Crafted in a rustic redwood barn cellar on the wild coast of Mendocino.
- Destemmed using a traditional hand-built redwood zaranda.
- Produced with zero added sulfur, fining, or filtration.

## Food pairing

The electric acidity, saline minerality, and mild tactile texture from brief skin contact make this wine exceptionally suited for fresh seafood, goat cheese, and herb-forward green sauces.

## Wine making process

Grapes are hand-harvested and hand-destemmed on a redwood zaranda or foot-stomped with whole clusters. After 5 to 7 nights of skin maceration, the fruit is gently pressed into stainless steel. Fermentation occurs spontaneously with wild yeasts, and the wine is aged in stainless steel without fining, filtration, or added sulfur.
