## About this wine

Monteverro is the flagship wine of the eponymous estate founded by Georg and Julia Weber in Capalbio, located in the southern reaches of Tuscany's Maremma region. With a vision to create a world-class Grand Cru, the estate benefits from its close proximity to the Tyrrhenian Sea, which provides cooling breezes that temper the Mediterranean heat. The vineyards are planted on clay and limestone soils rich in stony minerals. The 2019 vintage represents a significant milestone for the estate, marking its official certification as an organic winery, reflecting their deep commitment to environmental harmony and terroir expression.

## Interesting facts

- Monteverro is a state-of-the-art gravity-fed winery, completely eliminating mechanical pumping to preserve grape integrity.
- The 2019 vintage marks the estate's official transition to certified organic (BIO) viticulture.
- The vineyards are located just 1.6 kilometers from the Tyrrhenian Sea, benefiting from constant cooling marine breezes.

## Food pairing

This full-bodied, highly structured Bordeaux blend requires rich, protein-heavy dishes to soften its powerful, fine-grained tannins. The vibrant acidity cuts through fat, while the wine's intense dark fruit and savory graphite notes beautifully complement roasted meats, game, and aged cheeses.

## Wine making process

The winemaking process at Monteverro is designed to preserve the pristine quality of the hand-harvested fruit. Operating entirely by gravity to avoid mechanical pumping, the winery handles the grapes with extreme care. Each parcel is vinified separately in temperature-controlled stainless steel and French oak barrels using indigenous yeasts. Manual punch-downs are performed to gently extract color and tannins. The wine is aged for 24 months in French oak barriques, of which 70% are new and 30% are second-use. To maintain its natural structure and complexity, the wine is bottled unfined and unfiltered.
