Società Agricola Grosjean Vins is a multi-generational, family-owned winery with a long history, committed to organic farming and respecting the territory. The vineyards are situated in the Valle d'Aosta region at high elevations.

## Interesting facts

- Vineyards at 800-900m altitude.
- Organic farming since 2011.
- No insecticide/acaricide treatments since 1975.
- Named after a 2815m mountain.

## Food pairing

The wine's vibrant acidity and dry profile cut through richness and fat, making it an excellent palate cleanser. Its subtle fruit and mineral notes complement delicate seafood and charcuterie without overpowering them.

## Wine making process

The winemaking process begins with whole cluster pressing of the Chardonnay, Gamay, and Pinot Noir grapes, followed by a brief maceration in the press. The resulting must undergoes alcoholic fermentation in stainless steel at low temperatures with selected yeasts. The wine is then aged in stainless steel before undergoing its second fermentation in the bottle (Metodo Classico). It rests on its lees for 15-18 months before disgorgement. The harvest typically occurs at the end of August.
