## About this wine

Cantina Vignaioli del Morellino di Scansano was established in 1972 by a small group of grape growers in Scansano, Maremma. Today, the cooperative represents 170 member families farming over 700 hectares of vineyards. Renowned for its pivot toward quality-driven viticulture and modern technology, the winery was named Italy's Best Cooperative Winery by Weinwirtschaft in 2025.

## Interesting facts

- Grapes are protected immediately upon harvest with dry ice to prevent oxidation and preserve delicate fruit aromas.
- Named Italy's Best Cooperative Winery by German trade publication Weinwirtschaft in 2025.
- Employs Internet-of-Things field sensors monitored by agronomists to provide real-time guidance to 170 member families.

## Food pairing

The energetic acidity and firm, fine-grained tannins of Maremma Sangiovese effortlessly cut through rich animal fats and rich tomato-based meat ragùs, while complementary earthy tones align perfectly with aged local sheep cheeses and cured meats.

## Wine making process

Grapes are harvested at full phenolic maturity and immediately protected with dry ice to prevent oxidation. The wine undergoes a hot pre-fermentative maceration at 35°C for 12 hours followed by fermentation in stainless steel tanks at a maximum of 27°C with 7 days of skin contact. It matures in stainless steel on fine lees for 4 months where malolactic fermentation completes, followed by 3 months of bottle refinement without oak contact.
