## About this wine

Moretta Wines is an independent boutique producer led by agronomist-enologists Natalia Poblete Sáez and María José Ortúzar Alessandri in Chile's Maule Valley. The winery is a member of MOVI (Movimiento de Viñateros Independientes). The name 'Ceniciento' came about when a neighbor in Cauquenes faced losing his harvest to nearby forest fires; the duo stepped in to rescue the grapes, transforming them into an expressive Cabernet Sauvignon.

## Interesting facts

- The name Ceniciento blends ashes and Cinderella, reflecting grapes rescued from forest fires.
- Co-founder Natalia Poblete was named Young Winemaker of the Year by Tim Atkin MW.
- Moretta Wines belongs to MOVI, Chile's independent winemakers movement.

## Food pairing

The fresh natural acidity and fine-grained tannins balance the rich fats of grilled red meats and savory pork. Earthy notes complement mushroom sauces and roasted herbs.

## Wine making process

Grapes are sourced from 20 to 25-year-old dry-farmed vines grown on granitic soils with high quartz content in Cauquenes. After manual harvesting, grapes undergo 3 to 5 days of cold maceration, followed by spontaneous fermentation with native yeasts in stainless steel tanks. After 10 days of post-fermentation skin maceration, the wine is aged for 10 months in neutral French oak barrels.
