## About this wine

Casella Wines was established by Sicilian immigrants Filippo and Maria Casella in 1969 in Yenda, New South Wales. In 2001, their son John Casella created the [yellow tail] brand featuring the iconic yellow-footed rock wallaby, aiming to create approachable, vibrant wines free from pretense. Sourced from sun-drenched vineyards across South Eastern Australia, this wine captures an easy-drinking, fruit-forward style.

## Food pairing

The natural grape sweetness and delicate carbonation of this wine tame spicy dishes by cooling chilli burn. The high sugar and acidity also complement soft cheeses and fresh fruit desserts effortlessly.

## Wine making process

Grapes are harvested during the cool of night to preserve natural freshness and vibrant fruit aromatics. Following gentle pressing, free-run and light press juice undergo fermentation in temperature-controlled stainless steel tanks. Fermentation is halted early to maintain natural grape sweetness and a low alcohol level. Light effervescent carbonation is introduced prior to cold stabilization, filtration, and bottling under Stelvin screw cap.
