## About this wine

Domaine Anita was established in 2015 by Anita Kuhnel, a former professional championship cyclist who brought her determination and precision to viticulture following formal training in Burgundy. The estate focuses on high-precision, single-vineyard Beaujolais crus. The Les Caves cuvée comes from a historic lieu-dit in Chénas within the Moulin-à-Vent appellation, situated on granite soils laced with manganese and planted with old vines dating back to the 1940s.

## Interesting facts

- Founded by former professional championship cyclist Anita Kuhnel in 2015.
- Sourced from century-old Gamay vines planted in manganese-rich granite soils.
- Combines semi-carbonic Beaujolais techniques with Burgundian oak aging.

## Food pairing

As one of the most structured and age-worthy Beaujolais Crus, Moulin-à-Vent possesses rich tannins and high acidity. It thrives alongside savory, rich poultry such as duck or coq au vin, cuts through the fat of grilled red meats, and pairs seamlessly with earthy wild mushrooms and firm aged cheeses.

## Wine making process

Grapes are harvested manually with double sorting in the vineyard and cellar. Vinification relies on traditional semi-carbonic maceration with whole clusters (ranging from 20% to 100% whole bunch) lasting 11 days in temperature-controlled tanks, followed by gentle extraction via a low-pressure press. Maturation takes place over 6 to 12 months split between concrete/stainless steel tanks and neutral Burgundian oak barrels, followed by 4 months of bottle aging before release.
