## About this wine

The Nebbiolo d'Alba DOC Paisan from Bersano is crafted from 100% Nebbiolo grapes grown in the Alba region of Piedmont. This appellation is known for producing wines that, while sharing the Nebbiolo grape with Barolo and Barbaresco, typically present a more accessible profile. Bersano, a producer founded in 1907, emphasizes vineyard quality and has a deep connection to Piedmont's winemaking traditions, managing extensive vineyard holdings and preserving cultural heritage through its wine museums.

## Interesting facts

- Nebbiolo d'Alba is often seen as the approachable sibling to Barolo and Barbaresco.
- Bersano manages over 230 hectares of vineyards in Piedmont.
- The winery houses significant wine museums, preserving local heritage.

## Food pairing

The wine's medium body and well-integrated tannins are well-suited to complement the protein in red meats and richer dishes. Its good acidity can cut through the richness of sauces and fats, while its subtle aromas can be enhanced by earthy ingredients like mushrooms and herbs.

## Wine making process

The Nebbiolo d'Alba DOC Paisan is produced using 100% Nebbiolo grapes. After manual harvest and soft pressing, the grapes undergo fermentation with an 8-day maceration period at controlled temperatures of 30°-32°C, utilizing techniques like cap punching and pumping over. Malolactic fermentation follows, with aging taking place for a minimum of 12 months in large oak barrels, complemented by 6 months of bottle aging. The vineyards are managed using the low Guyot system on calcareous clay-silt soils.
