## About this wine

Azienda Agricola La Ricolla was established in 2004 by Daniele Parma, who transitioned his family's estate toward organic and biodynamic viticulture. Located in the steep, terraced landscapes of Liguria near Sestri Levante and Ne, the estate encompasses small plots cultivated with indigenous grape varieties. The grapes for Ninte de Ninte originate from the La Prioria vineyard in Carasco, where 40-year-old vines grow on clay and schistous soils over a calcareous subsoil. La Ricolla is a recognized member of the Triple A collective, dedicated to natural winemaking principles.

## Interesting facts

- The name 'Ninte de Ninte' translates to 'Nothing at All' in local Ligurian dialect.
- Winemaker Daniele Parma painted his natural winemaking manifesto directly onto his cellar wall.
- The wine is fermented and aged entirely in custom Italian terracotta amphorae without added sulfites.

## Food pairing

The subtle phenolic texture, bright acidity, and coastal minerality of skin-contact Bianchetta Genovese complement herbal, olive oil-rich, and seafood dishes native to Liguria. The mild skin contact provides structure to cut through rich sauces like pesto without dominating the food.

## Wine making process

The winemaking approach for Ninte de Ninte follows a minimalist philosophy. Hand-harvested Bianchetta Genovese grapes undergo spontaneous fermentation with ambient yeasts in terracotta vessels. Fermentation involves 4 to 5 days of skin contact, followed by complete malolactic fermentation. The wine matures for 6 months in Italian terracotta amphorae and receives 3 additional months of bottle aging prior to release. It is bottled unfined and unfiltered with zero added sulfites.
