## About this wine

Azienda Agricola La Ricolla was founded in 2004 by Daniele Parma in Ne, Liguria. Transitioning away from conventional techniques, Parma turned to biodynamic farming to rescue steep, historic, terraced vineyard parcels in the hinterland of Golfo del Tigullio. The cuvée name 'Ninte de Ninte' translates from local dialect to 'Nothing of nothing', symbolizing the producer's natural philosophy of zero additive intervention and minimal manipulation.

## Interesting facts

- The name 'Ninte de Ninte' is Ligurian dialect for 'Nothing of nothing', representing zero added sulfites or winemaking chemicals.
- The entire production for this vintage was limited to just 1,200 bottles from tiny 0.8-hectare historic plots.
- It is crafted from Bianchetta Genovese, a rare indigenous white grape variety native to the hills around Genoa.

## Food pairing

The wine's crisp acidity and delicate phenolic skin-contact texture cut through olive oil, fresh green herbs, and vegetable dishes such as classical Ligurian pesto. Its bright mineral drive harmonizes with white fish, shellfish, and light fresh cheeses.

## Wine making process

Organically and biodynamically grown grapes are hand-harvested from 40-year-old vines planted on schist and limestone soils. Fermentation occurs spontaneously with native yeasts in terracotta amphorae, accompanied by 4 to 5 days of skin maceration. The wine ages for 6 months in the same amphora containers before bottling. It is produced completely unfined, unfiltered, and with zero added sulfites.
