## Wine making process

The Nizza Gavelli Garesio 2018 begins with a cold pre-fermentation maceration for 3-4 days. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks for about 10 days with selected yeasts. This is followed by maceration on the skins at a low temperature for approximately 25 days, focusing on delicate extractions. The wine then undergoes malolactic fermentation and ages for around 18 months in French oak barrels (barriques and tonneaux), with some indications of Austrian oak barrel aging. Grapes are harvested by hand and meticulously selected.
