## Interesting facts

- Founded by hockey legend Wayne Gretzky, the winery features a backyard skating rink that opens during the winter months.
- Baco Noir is a French-American hybrid grape created by François Baco, exceptionally well-suited to Ontario's cold winters.
- The 'No. 99' on the label is a tribute to Wayne Gretzky's iconic, retired NHL jersey number.

## Food pairing

Baco Noir's high acidity, smoky undertones, and rich dark fruit profile make it an exceptional match for rich, smoky, and charred foods. The wine's low tannins prevent it from clashing with spicy or highly seasoned dishes, while its vibrant acidity cuts through the fat of grilled meats, game, and rich barbecue sauces.

## Wine making process

The Baco Noir grapes are harvested at optimal ripeness from select Ontario vineyards. Following crushing and destemming, fermentation takes place in temperature-controlled stainless steel tanks to preserve the vibrant fruit character. A portion of the wine is aged in a combination of American and French oak barrels to add subtle spice, smoky complexity, and to soften the grape's naturally high acidity before final blending and bottling.
