## Food pairing

The wine's full body and defined tannins are well-suited to complement the richness of red meats and game, where the tannins can interact with the protein. Savory notes in the wine can echo earthy flavors in dishes, while the fruit components can provide a pleasant contrast to richer, fattier elements.

## Wine making process

The grapes for Noi 2018 are fermented in stainless steel tanks under controlled temperatures, with periodic racking and extended maceration on the skins. Following fermentation, the wine is aged for approximately 18 months in second-passage barriques. After this period, the different grape varieties are blended and the wine continues to age for a further 6 months in bottle. Harvest takes place between mid-September and late October, with yields managed at 7,000 kg/ha.
