## Food pairing

The wine's vibrant acidity and silky tannins make it versatile. Its bright red fruit notes and subtle earthy undertones complement a range of proteins and earthy vegetables. The acidity helps cut through richer dishes, while the fruit-forward character bridges well with slightly sweet or savory elements.

## Wine making process

The 2023 None Such Mencía was produced using a minimalist winemaking philosophy. Grapes from Silvaspoons Vineyard were hand-harvested on September 19th and foot-crushed. The wine underwent fermentation with 100% whole clusters and native yeasts, followed by basket pressing. It was then aged for nine months in five neutral oak barrels. This process emphasizes natural expression and minimal intervention.
