## About this wine

Wavy Wines was founded in 2019 in Silver Lake, Los Angeles, by long-time friends Jude Zasadzki and Eliot Kessel. The concept emerged from a desire to create low-intervention, crushable California wines designed for immediate, casual enjoyment. Sourcing grapes from organically and biodynamically farmed plots across California, Wavy operates as a natural négociant label focused on high-energy, refreshing wines.

## Interesting facts

- Founded by two friends at a child's birthday party while drinking global natural wines.
- The wine gains its unique natural carbonation by bottling still-fermenting juice.
- Wavy Wines recycles pressed pomace into low-ABV sparkling drinks called piquettes.

## Food pairing

The bright acidity and lively effervescence cut through delicate fats like fresh cheese and oily fish, while the light skin-contact tannin structure pairs beautifully with savory white meats and citrus-dressed dishes.

## Wine making process

Produced using the ancestral method (pétillant-naturel), the grapes undergo a brief two-day skin maceration prior to pressing. Primary fermentation occurs in stainless steel tanks using native yeasts without temperature manipulation or additives. Fermentation completes inside the bottle to capture natural carbonation by racking base wine and blending in active, fermenting Chardonnay juice. The wine is aged on fine lees under crown cap and bottled unfined, unfiltered, and with no added sulfites.
