## Interesting facts

- The label features 'Ca' and '40.08', representing the chemical symbol and atomic weight of Calcium, highlighting the limestone-rich soils.
- Valentina Passalacqua's vineyards are located in the Gargano National Park, benefiting from unique microclimates and sea breezes.

## Food pairing

This light-bodied, high-acid white wine thrives alongside fresh, salty, and fried dishes. Its vibrant acidity cuts through the richness of fried seafood and creamy cheeses like burrata, while its clean mineral profile complements the delicate, briny flavors of shellfish and fresh Mediterranean vegetables.

## Wine making process

Made from 100% Bombino Bianco grapes grown biodynamically on limestone soils. The grapes are hand-harvested, spontaneously fermented with native yeasts in stainless steel tanks, and undergo a short maceration. The wine is aged in stainless steel to preserve its fresh fruit character and minerality, and is bottled unfiltered and unfined with minimal sulfur added.
