## About this wine

Nuiton-Beaunoy is the commercial label of La Cave des Hautes-Côtes, established in 1957 in the village of Orches. It stands as the only remaining cooperative winery in Burgundy's prestigious Côte d'Or. Grounded in deep cooperative values, it unites around 100 local winegrowing families who pool their small parcel holdings across the Hautes-Côtes de Nuits and Hautes-Côtes de Beaune. The cooperative is certified under the strict 'Vignerons Engagés' charter, emphasizing environmental conservation, social fairness, and sustainable viticulture.

## Interesting facts

- Nuiton-Beaunoy is the only cooperative winery remaining in Burgundy's prestigious Côte d'Or.
- The winery is certified under the 'Vignerons Engagés' charter, committing to rigorous environmental and social standards.
- This wine is completely unoaked, relying entirely on fine lees aging in stainless steel to develop its signature creamy texture.

## Food pairing

The wine's vibrant, unoaked acidity acts as an excellent palate cleanser, cutting through rich, creamy sauces and fatty elements. Its medium body and subtle creaminess from lees aging complement delicate proteins like poultry and white fish, while its fresh mineral profile pairs beautifully with tangy cheeses.

## Wine making process

This wine is crafted to showcase pure, unadorned Burgundy Chardonnay. Following a rapid harvest in early September 2023, the grapes undergo complete pneumatic pressing and static cold settling. Fermentation is conducted in temperature-controlled stainless steel vats to preserve fresh primary fruit characteristics. The wine is 100% unoaked, matured entirely on its fine lees in stainless steel vats to build a naturally unctuous, creamy mouthfeel and structural weight without any oak influence.
