## About this wine

Le Casot des Mailloles is a legendary estate in Banyuls-sur-Mer, Roussillon, famed for pioneering the natural wine movement in the region. Originally established by Alain Castex, the estate is now run by Jordi Perez, who maintains the steep, terraced vineyards manually without any chemicals. The estate's name refers to the traditional stone shelters ('casot') found in the vineyards. Obreptice is a rare, highly sought-after white cuvée that captures the wild, wind-swept maritime terroir of the Mediterranean coast.

## Interesting facts

- The vineyards are so steep that all work, including harvesting, must be done entirely by hand without any machinery.
- The estate's name, 'Casot', refers to the historic stone shelters built by vineyard workers in the region.
- This wine is bottled with zero added sulfur, representing the purest expression of natural winemaking.

## Food pairing

The wine's vibrant acidity and mineral backbone cut through rich seafood and poultry dishes, while its herbal undertones complement Mediterranean herbs and fresh vegetables.

## Wine making process

Hand-harvested from steep, schist terraces. The grapes undergo direct pressing followed by spontaneous fermentation with indigenous yeasts in neutral vessels. The wine is aged on its fine lees. Unfined, unfiltered, and bottled with zero added sulfur to preserve the raw energy and purity of the fruit.
