## Wine making process

This wine is crafted using the ancestral method (méthode ancestrale) to produce a natural sparkling wine (Pet'Nat). The Chenin Blanc grapes are hand-harvested and gently pressed. Fermentation begins spontaneously with indigenous yeasts in stainless steel tanks. Before the primary fermentation is complete, the wine is bottled, allowing the remaining natural sugars to finish fermenting under cap, trapping the carbon dioxide. The wine is bottled Extra Brut with no added dosage, unfined, unfiltered, and with minimal sulfur additions.
