## About this wine

Swick Wines is led by fifth-generation Oregonian Joe Swick, who worked 15 harvests globally across Australia, Portugal, Italy, and France before returning to Oregon to establish his own winery in Newberg. Dedicated to minimal-intervention winemaking, Swick sources organic grapes from high-elevation, cool-climate vineyards across Oregon and Washington State. Named as a lighthearted homage to the movie Ghostbusters, Only Zuul showcases the distinctive Ramato character of naturally pink-berried grape varieties.

## Interesting facts

- The wine's name is a humorous reference to the iconic Ghostbusters movie line 'There is no Dana, Only Zuul'.
- It gets its unique ramato/rosé hue from 30 to 60 days of skin maceration on pink-skinned white grape varieties.
- Winemaker Joe Swick worked 15 harvests around the world before founding his winery in Oregon.

## Food pairing

The bright natural acidity and subtle skin-contact tannic structure of this skin-contact rosé enable it to cut through rich, fatty dishes while standing up beautifully to complex spices and heat without being overpowered.

## Wine making process

Hand-harvested from organic vineyards, both Pinot Gris and Gewürztraminer are fermented separately but treated identically. The fruit undergoes extended skin maceration lasting 30 to 60 days using a combination of whole clusters and destemmed grapes, stomped daily by foot. Fermentation occurs spontaneously with indigenous yeasts and zero temperature control. The wine ages in neutral French oak barrels and concrete egg vessels before being bottled unfined and unfiltered, with minimal sulfur added at bottling.
