## About this wine

Jean-Marc Dreyer took over his family mixed agricultural farm in Rosheim, Alsace in 2003, converting the vineyards entirely to organic and biodynamic viticulture. Inspired by a 2009 pilgrimage along the Camino de Santiago and mentored by natural wine pioneer Patrick Meyer, Dreyer adopted a strict zero-sulfite philosophy. The Origin series revives traditional Alsatian skin-contact maceration methods, utilizing old vines planted across clay and limestone soils to craft artisanal single-varietal expressions.

## Interesting facts

- Winemaker Jean-Marc Dreyer committed to zero-sulfite winemaking following a pilgrimage along the Camino de Santiago in 2009.
- The estate practices agroforestry, planting trees directly between vine rows to enhance ecosystem biodiversity.
- Skin maceration for the Origin series traditionally takes place outdoors in bins prior to cellar pressing.

## Food pairing

The light phenolic skin tannins and vibrant acidity of this skin-contact Auxerrois allow it to cut through rich fats in pork and duck while matching the savory umami of fermented vegetables and washed-rind cheeses.

## Wine making process

Hand-harvested whole clusters undergo skin-contact maceration for seven to twelve days in open bins prior to pressing. Fermentation occurs spontaneously using only wild native yeasts with zero additives. The wine receives no added sulfites, no fining, and no filtration. It ages for approximately twelve months on fine lees in traditional neutral Alsatian wooden foudres before bottling.
