## About this wine

Graziano Prà is celebrated as one of the key figures who restored prestige to the Soave region. Established in 1983, Azienda Agricola Prà is situated in Monteforte d'Alpone, rooted in the volcanic hills of the Soave Classico zone. This entry cuvée is affectionately named 'Otto' after the family's beloved Border Collie, who lived alongside Graziano for fifteen years. Crafted strictly from organically grown native Garganega, the wine represents Graziano's commitment to expressive purity, regional authenticity, and screw-cap preservation.

## Interesting facts

- The wine is named after Graziano Prà's beloved Border Collie, Otto, who lived with the family for 15 years.
- Prà was a pioneer in adopting screw caps for premium Italian whites to guarantee freshness and eliminate cork taint.
- Vines for this cuvée range from 30 to 70 years old, planted in ancient volcanic basalt soils.

## Food pairing

The high, crisp acidity and clean mineral backbone of Garganega effectively cut through rich lipids in fresh goat cheeses and prosciutto. Its delicate floral and orchard fruit aromas complement subtle seafood dishes and fresh herb pestos without dominating their nuanced flavors.

## Wine making process

Hand-harvested from mid-September to mid-October from vines aged between 30 and 70 years, planted on basaltic volcanic soils. Grapes undergo destemming and gentle soft pressing before fermenting in temperature-controlled stainless steel tanks at 13°C under inert gas to prevent oxidation. Malolactic fermentation is completely blocked to preserve vivid natural acidity. The wine matures for five months in stainless steel tanks prior to bottling under screw cap.
