## About this wine

Mas Guallar was founded in 2019 by Chilean winemaker Camila Opazo in the rugged landscape of Maury within the Roussillon region. After starting her winemaking journey in Bordeaux at age 18 and studying oenology in Spain, Opazo worked harvests across Chile, New Zealand, and Spain before establishing her own estate in the French Pyrenees. The 1.7-hectare parcel sits on sedimentary schist soils, surrounded by wild garrigue scrubland. The name 'Oxymoron!' reflects the deliberate choice to take Muscat Petit Grain—historically dedicated to sweet fortified wines in Roussillon—and transform it into a bone-dry, low-intervention, zero-sulfite white wine.

## Interesting facts

- Camila Opazo started her winemaking journey at age 18 in Bordeaux before founding Mas Guallar in 2019.
- The name plays on using Muscat—traditionally used for sweet fortified wines—to craft a bone-dry natural white.
- Every bottle features original hand-painted artwork created by winemaker Camila Opazo.

## Food pairing

High aromatic intensity and fresh natural acidity allow this dry white to slice through rich aged cheeses while seamlessly complementing herb-forward, citrus-accented, and mild exotic dishes without being overshadowed.

## Wine making process

Farmed under organic principles in third-year conversion, the Muscat Petit Grain grapes are harvested entirely by hand from non-mechanized plots. In the winery, the process combines direct pressing with a portion of grapes undergoing two weeks of cold cryomaceration to extract gentle phenolic texture prior to fermentation. Fermentation is carried out spontaneously with native yeasts. The wine is aged for 8 months in stainless steel vats to preserve fresh aromatic purity. It is bottled unfined, unfiltered, and with zero added sulfur dioxide.
