## About this wine

Founded in 1921 in Castiglione Falletto by Lorenzo Scavino and his son Paolo, Azienda Agricola Paolo Scavino is one of Barolo's most celebrated historic family estates. Managed for seven decades by the legendary winemaker Enrico Scavino, whose signature features on the 2022 bottling, the estate is now run by his daughters Enrica and Elisa Scavino. This flagship classic Barolo continues the long-standing Langhe tradition of blending grapes across multiple premier single-vineyard sites located in the Castiglione Falletto, Barolo, and Serralunga d'Alba communes.

## Interesting facts

- The 2022 bottle features the signature of legendary winemaker Enrico Scavino, who led the estate for seven decades.
- This classic Barolo blends Nebbiolo from 7 to 8 distinct single-vineyard MGA sites across three key communes.
- The wine undergoes nearly two years of oak maturation followed by ten months of bottle aging prior to release.

## Food pairing

Barolo's formidable combination of high acidity and high, structured tannins requires rich dishes featuring substantial protein, fat, and umami. Red meats and wild game soften the aggressive tannic grip on the palate, while the bright acidity cuts through rich, savory sauces and aged cheeses. Earthy elements like truffles and mushrooms mirror Nebbiolo's complex aromatic nuances.

## Wine making process

Harvested by hand with rigorous selection to preserve pristine grape quality during the warm 2022 season. Fermentation takes place in temperature-controlled stainless steel tanks using native yeasts, with 8 to 12 days of skin contact and total alcoholic fermentation lasting between 20 to 30 days. Malolactic fermentation is completed in oak barrels. The wine matures for 19 to 20 months in neutral French oak barrels and large casks, followed by up to a year resting in stainless steel and a minimum of 10 months aging in bottle.
