## About this wine

Vinícola de Nulles was founded in 1917 as a union cooperative of grape-growing families in Catalonia to restore local viticulture after phylloxera. In 1919, architect Cèsar Martinell, a student of Antoni Gaudí, designed the grand winery cellar known locally as the 'Cathedral of Wine'. The wine range name 'Parabòlic' pays tribute to the iconic parabolic arches inside this Modernist building, which serve both as an architectural hallmark and as a thermal regulator for fermentation.

## Interesting facts

- The historic winery cellar was designed in 1919 by Cèsar Martinell, a student of Antoni Gaudí.
- The name 'Parabòlic' references the cathedral-like parabolic arches forming the winery interior.
- The cooperative unites around 100 local farming families managing 200 hectares of organic vines.

## Food pairing

The bright citrus notes and crisp acidity of this young dry Catalan white cut through rich seafood and elevate fresh vegetable dishes, while its light body pairs seamlessly with delicate white fish without overpowering subtle flavors.

## Wine making process

Sourced from certified organic family-owned vineyards grown on calcareous clay soils near the Mediterranean coast. Harvested by hand, whole clusters undergo gentle pneumatic pressing followed by spontaneous fermentation driven by indigenous yeasts in temperature-controlled stainless steel vats. The wine is aged in stainless steel to retain freshness, then bottled unfined and unfiltered with minimal added sulfur.
