## About this wine

Parajes del Valle Monastrell is a 100% Monastrell red wine from the Jumilla DO in Spain. Established in 2018, Parajes del Valle Bodegas y Viñedos S.L. is a modern winery led by winemaker María Jover, who champions traditional winemaking methods like the 'Terraje' system. The vineyards are situated at altitudes between 600-800 meters, contributing to the wine's character. The winery focuses on certified organic viticulture and minimal intervention winemaking, aiming to produce sincere wines that express the typicity of the Jumilla region. This wine is noted for its freshness, achieved through early harvesting and fermentation in stainless steel and concrete tanks, allowing the fruit to be the primary focus. It is also recognized as a vegan-friendly option.

## Interesting facts

- Certified organic and vegan-friendly.
- Uses the traditional 'Terraje' system for land use.
- Fermented and aged in concrete tanks.
- No added sulfur at bottling.

## Food pairing

The wine's medium-plus body and ripe tannins provide a good counterpoint to the richness of grilled meats and savory dishes. Its fresh acidity cuts through fattier components, cleansing the palate, while its fruit-forward character complements a variety of herbs and spices.

## Wine making process

Parajes del Valle Monastrell is produced from 100% Monastrell grapes grown under certified organic conditions. The vines range from 15 to 40 years old and are situated at high altitudes (600-800 meters) on limestone or sandstone soils. The viticulture employs dry farming and the traditional 'Terraje' system. Harvest is manual. Vinification involves fermentation in stainless steel tanks, followed by malolactic fermentation in concrete tanks. The wine is then aged for 8 months in concrete tanks. Notably, no sulfur is added at bottling.
