## About this wine

Domaine Pascal Carole is a micro-estate led by Pascal Carole, originally from the French Caribbean island of Martinique. After being inspired by a winemaking class in San Francisco, Carole trained under natural winemakers before establishing his own project in Saumur, Loire Valley. The winery operates out of a small garage facility situated on an island in the middle of the Loire River. Production across the entire domain is extremely limited, with this specific cuvée yielding only 1,010 bottles for the 2023 vintage.

## Food pairing

As a gastronomic rosé with brief skin maceration, this wine possesses structural weight and phenolic grip that bridge the gap between white and red wine. High natural acidity cuts through rich fats in oily fish and raw beef dishes, while light savory complexity complements cured meats and roasted vegetables without overpowering them.

## Wine making process

Made from 100% organically grown Cabernet Franc farmed by Colin Janot in Saix. Grapes undergo whole-cluster crushing followed by approximately four days of skin maceration to build subtle structure and color. Fermentation occurs spontaneously using only indigenous yeasts. The wine is aged in stainless steel tanks for eight months, followed by an additional eighteen months of bottle aging prior to release. It is bottled unfined, unfiltered, and with zero added sulfites.
