## About this wine

The Passorone Appassimento is an Italian red wine from the Puglia region, produced by Vini Buoni AB. Its distinctive character is derived from the appassimento winemaking method, where grapes are dried post-harvest to intensify their flavors and sugars. This technique, also used for renowned wines like Amarone, contributes to the wine's concentrated profile. The blend includes Merlot, Sangiovese, and Primitivo, all cultivated organically. Vini Buoni AB's mission is to support artisan wineries by facilitating their market access.

## Food pairing

The wine's full body and ripe tannins are well-suited to complement the richness and protein in red meats, while its concentrated fruit notes can stand up to robust flavors. The oak aging adds a layer of complexity that pairs well with savory dishes and aged cheeses.

## Wine making process

The Passorone Appassimento is produced using the appassimento method, where grapes are dried after harvest to concentrate their sugars and flavors. The grapes, harvested manually in late September, are fermented in stainless steel tanks with extended skin contact. Following fermentation, malolactic fermentation is carried out. The wine then undergoes a six-month aging period in a combination of French and American oak barrels. Organic viticulture practices are employed throughout the cultivation process.
