## About this wine

Azienda Agricola Pecchenino has family winemaking roots in Dogliani dating back to the late 18th century. Located in the Langhe region of Piedmont, Italy, the estate expanded significantly in 1987 under brothers Orlando and Attilio Pecchenino. The family focused on showcasing the true high-altitude potential of Dolcetto, elevating it into a globally respected DOCG appellation. The San Luigi bottling is sourced from vineyard parcels surrounding the estate in the historic San Luigi MGA at elevations of 390 to 430 meters.

## Interesting facts

- First produced in 1994, San Luigi is aged entirely in stainless steel to preserve pure Dolcetto fruit.
- Pecchenino is widely credited with elevating Dolcetto from an everyday table wine to DOCG prestige.
- Vineyards are situated at high elevations of up to 430 meters above sea level in Dogliani.

## Food pairing

The lively acidity and soft tannins of stainless-steel aged Dolcetto slice through rich tomato sauces, savory ragùs, and cured meats without clashing with food acidity or overwhelming medium-weight proteins.

## Wine making process

Grapes are hand-harvested in mid-September from certified organic vineyards planted on calcareous clay soils. The fruit undergoes temperature-controlled fermentation and maceration on the skins for 10 days at 28°C in stainless steel vats. Spontaneous malolactic fermentation follows initial racking. The wine is aged exclusively for six months in stainless steel tanks with no oak maturation to preserve primary fruit purity and terroir expression before bottling under a Diam cork closure.
