## About this wine

Penfolds was founded in 1844 by Dr. Christopher and Mary Penfold in South Australia and has grown to become one of Australia's most revered wineries. Bin 8 was introduced in 2003 in response to global demand for Penfolds' classic multi-regional Shiraz and Cabernet Sauvignon blends. The fruit for this release is carefully selected from across premium South Australian sub-regions including Barossa Valley, McLaren Vale, Coonawarra, Padthaway, and Robe, bringing together diverse microclimates and soil profiles.

## Interesting facts

- Bin 8 gets its name because it is matured in oak barrels previously used for Bin 128, Bin 28, and Bin 389.
- First introduced in 2003 to meet international demand for classic Australian Shiraz-Cabernet blends.
- Combines grapes from distinct South Australian climates, from cool coastal Robe to warm Barossa Valley.

## Food pairing

The dark fruit concentration, vibrant acidity, and structured tannins of this Shiraz-Cabernet blend demand hearty, rich foods. High-protein meats soften the wine's medium-plus tannins, while the natural spice complexity harmonizes effortlessly with warm herbs, spices, and savory reductions.

## Wine making process

Following harvest, the fruit underwent fermentation before aging for 10 months in 300L oak hogsheads. The maturation profile comprises 11% new French oak, with the remainder in seasoned French and American oak barrels previously used for Penfolds Bin 128, Bin 28, and Bin 389. The final blend yields a balanced wine with 14.5% alcohol by volume, a pH of 3.64, and total acidity of 6.2 g/L, sealed under screw cap.
